This is a one-pot, starch and vegetable side dish that may be served with a green salad as a main course for two.

Recipe Ingredients for Spiced Vegetable Couscous

1/2 cup chickpeas
1/2 cup carrots
1/2 cup zucchini
1/2 cup green onions
2 tbsp olive oil
1 1/2 cups water
1 tsp paprika
1/4 tsp chili flakes
1 cup couscous
1/2 cup dried cranberries

Recipe Directions for Spiced Vegetable Couscous

  1. Combine chickpeas, carrots, zucchini, onions and olive oil in a pot. Add stock, parsley, paprika, chili flakes and salt to taste. Bring to boil and sprinkle in couscous. Stir around, add raisins, cover and remove from heat. Let sit 5 minutes, uncover and stir again.

  2. Serve lamb chops on a bed of couscous with salad on the side.

  3. Serves 4
