Recipe Ingredients for spiced tilapia with red pepper tomatillo sauce

226 g pepper, sweet, red (2 medium)
2 tsp canola oil
300 g tomatillo, chopped (about 2 cups)
1/4 tsp salt
1 garlic clove
6 tbsp cilantro, chopped
2 tsp rice vinegar
2 tsp honey
2 tbsp flour
2 tsp chili powder
1/2 tsp oregano, dried
1/2 tsp cumin
16 oz tilapia

Recipe Directions for spiced tilapia with red pepper tomatillo sauce

  1. Saute peppers & tomatillos in canola oil until tender (6 min). Add garlic, cilantro, vinegar & honey and then puree in blender.

  2. Combine flour and spices and then dredge fish in flour mixture. Coat pan with nonstick spray and cook fish until done. Top with red pepper-tomatillo sauce
