Recipe Ingredients for Spiced Sweet Potato Cupcakes

1 cups yams, baked
1 stick butter, softened, unsalted
3 eggs
2 tsp vanilla
1 cups sugar
1 cups white whole wheat flour
1 tsp baking soda
4 tsp nutmeg

Recipe Directions for Spiced Sweet Potato Cupcakes

  1. Bake 2-3 large yams in microwave until cooked

  2. Cream butter and sugar until fluffy, then add eggs one at a time

  3. Add vanilla extract

  4. Season yams with nutmeg and measure out one cup

  5. Sift one cup King Arthur White Whole Wheat Flour and baking soda. Set aside.

  6. Combine yams and sugar mixture and blend thoroughly with spoon/spatula

  7. Add flour gradually and mix thoroughly

  8. Put cupcake/muffin cups in muffin tin.

  9. Fill with 2/3 cupcake batter

  10. Bake 25-30 minutes, checking to see if done using a toothpick through the center of the cupcake. If done, toothpick will come out dry.

  11. Top with can frosting if preferred, but can be eaten without frosting.

  12. For a healthier option, substitute butter with 1/3 cup canola oil and 1/4 cup applesauce
