Recipe Ingredients for Spiced split peas

1 cup Select Dried Split Green Peas
2 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
2 cloves, raw Garlic
1 tsp Curry Powder
0.5 tsp Cinnamon, Ground
0.5 tsp Spices Ground Coriander
1.5 cup Fat Free Vegetable Broth
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
3 tbsp Sweetened Coconut Flakes
1 pepper Peppers, Jalapeno
1/4 cup Coriander Leaves

Recipe Directions for Spiced split peas

  1. Cook split peas in 6 cups water 40 minutes - an hour. Drain and set aside.

  2. Heat the oil in a large nonstick skillet. Add the onion and cook over medium heat, stirring frequantly, until golden brown. Add the garlic, curry powder, cinnamon, and coriander and cook stirring for 1 minute. Add the broth, tomato, coconut, and jalapeno pepper. Bring to a boil over high heat and add the split peas. Simmer, covered, over medium-low heat for 15 minutesto blend flavors. Uncover and cook over medium heat until thickened to a saucelike consistency, adjusting th eliquid if necessary. Addcilantro and season with salt to taste. Serve over jasmine rice and top with Cooling Cucumber Raita.
