Very healthy delicious Mediterranean/ Indian dish.

Recipe Ingredients for Spiced Quinoa

1 tablespoon olive oil
1 small onion, chopped
1 garlic clove, minced
3/4 cup quinoa
1 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1 cups chicken stock
14 ounce garbanzo beans, drained and rinsed
1/2 cup toasted almonds
1/2 cup golden raisins, soaked in hot water and drained

Recipe Directions for Spiced Quinoa

Stir together olive oil, onion, and garlic in saucepan over medium heat. Saute until onion is transparent (5 minutes). Stir in the quinoa and spices and chicken stock. Bring to a boil, reduce heat to low, and cover and simmer for 20 minutes or until quinoa is tender. Stir in almonds, beans and raisins. Serve warm or cold.
