Recipe Ingredients for Spiced Quinoa Apple Pie Parfait

1 Apple, Chopped
1 tablespoon Brown Sugar
1/2 tablespoon Cinnamon, Divided Use
1/2 teaspoon Nutmeg, Divided Use
1/2 teaspoon Salt, (divided Use)
1/4 cups Dry Quinoa
1 c yogurt, greek

Optional:
1/8 tsp Cinnamon
1 tsp Honey

Recipe Directions for Spiced Quinoa Apple Pie Parfait

  1. Preheat oven to 375F.

  2. Combine chopped apple, brown sugar, 1/4 tablespoon cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon salt in an oven safe dish. Roast apples until soft and caramelized, about 15-20 minutes.

  3. Combine dry quinoa with remaining cinnamon, nutmeg and salt. Cook according to the quinoa package directions.

  4. When apples and quinoa have cooled (not completely, but they shouldn?t be scalding) layer them in a glass with Greek yogurt. If desired, mix yogurt with optional cinnamon and honey for topping.
