Recipe Ingredients for Spiced Pumpkin Muffins

2 c. cake flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp. allspice
1 tsp cinnamon
1/2 tsp pumpkin pie spice
3/4 c. brown sugar
1/4 c egg substitute
1 c. applesauce
2 c. canned pumpkin
2 tbsp. fat free plain yogurt
1 tbsp flaxseed
3 tbsp water
2 tsp vanilla extract

Recipe Directions for Spiced Pumpkin Muffins

  1. Preheat oven to 350*.

  2. Combine first 7 ingredients in medium bowl.

  3. Combine remaining ingredients in nother bowl; mix well. Add to flour mixture. Fold in until just moist.

  4. Spoon into muffin pan sprayed with cooking spray.

  5. Bake for 10-15 minutes or until toothpick comes out clean.
