Recipe Ingredients for Spiced Pumpkin Cupcakes

3/4 cup canned organic pumpkin
2 large eggs
1/4 cup Agave Nectar
3/4 cup organic unsweetened applesauce
1/2 cup coconut oil
1/2 tablespoon vanilla extract
1/2 teaspoon fresh lemon juice
1 1/2 cups whole wheat pastry flour
1/2 cup almond meal
1/2 tablespoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/4 teaspoon sea salt
8 oz cream cheese
1/2 cup butter
1/4 cup maple syrup

Recipe Directions for Spiced Pumpkin Cupcakes

  1. Mix wet ingredients (first 7 ingredients)

  2. Mix dry ingredients (8-13)

  3. Add dry ingredients to wet ingredients.

  4. Bake at 350 F for 25 min.

  5. Frosting: Mix cream cheese, butter, and maple syrup. I added coconut flour to thicken my frosting.
