Recipe Ingredients for Spiced Pumpkin Cake

175 g Stork SB Margarine, melted and cooled
140 g Black Treacle
250 g Pumpkin, coarsely grated
100 g Light Brown Soft Sugar
2 eggs
350 g Self Raising Flour
1 tbsp Ground Ginger
1 tsp Grated Nutmeg
1 tsp Bicarbonate of Soda
3 tbsp Ginger Syrup
25 g Stem Ginger, chopped

Recipe Directions for Spiced Pumpkin Cake

  1. Heat oven to 180C/160C Fan/Gas 4 and grease and line a 20cm/8" square tim with baking parchment.

  2. Mix the Margarine, black treacle, pumpkin, sugar and eggs in a bowl, then stir in the flour, spices and bicarbonate of soda.

  3. Pour into the prepared tray and bake for 35 minutes or until a skewer comes out clean.Cut into 16 triangles, garnish with chopped ginger, and serve.
