Recipe Ingredients for Spiced Pumpkin Bran Muffins

1 cup Canned pumpkin
1 cup Wheat bran
3 Large egg whites
3/4 cup Lowfat buttermilk
1/3 cup Molasses
1/3 cup Brown sugar
1 1/4 cups Whole wheat flour
2 tsp Baking powder
1/2 tsp Baking soda
1 tsp Cinnamon
1 tsp Ginger

Recipe Directions for Spiced Pumpkin Bran Muffins

  1. Preheat your oven to 400 degrees.

  2. In a large bowl, combine the pumpkin, bran, egg whites, buttermilk, molasses and sugar. Stir until mixture is smooth and has no lumps.

  3. In another bowl combine the flour, baking powder, baking soda, cinnamon and ginger.

  4. Slowly stir the dry ingredients into the wet mixture, very gently mixing it. Do not over beat.

  5. Fill the cups of muffin tins 2/3rds full. If you are not using a non stick pan, line the cups with baking cups and grease them lightly. Bake the muffins for 20-30 minutes or until a toothpick inserted in the center of a muffin comes out clean. Remove from pan and cool on a wire rack for about 10 minutes.

  6. These can also be frozen ? cool completely, seal inside a plastic bag and freeze or refrigerate.
