Made with fresh pear and fat-free yogurt

Recipe Ingredients for Spiced Pear Muffins

1 cup flour, white
1/3 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
1/2 cup pecans, chopped
2/3 cup brown sugar, packed
1/2 tsp cinnamon
1 tsp fresh ginger, grated
2 T safflower oil
2 tsp vanilla extract
8 ounces plain fat-free yogurt
1 large egg
1 1/2 cups pear, peeled and finely diced
1 tablespoon turbinado sugar or raw cane sugar

Recipe Directions for Spiced Pear Muffins

  1. Preheat oven to 400 degrees.

  2. Combine all dry ingredients in large bowl. Add pecans.

  3. Combine remaining ingredients except pears and turbinado sugar. Mix well. Add to flour mixture and stir until just moistened. Fold in pears. Spray muffin pan with cooking spray. Divide mixture into cups and sprinkle with turbinado sugar. (or raw cane sugar works too.)

  4. Bake for 18-20 minutes or till center springs back when touched.
