Serve with brown rice or quinoa. 1 part rice to 2 part soup. Serve with scallions finely chopped on top as a garnish.

Recipe Ingredients for Spiced Peanut Soup

1 medium raw Bell Pepper Green
1 medium raw Bell Pepper Red
4.5 serving JiF Natural Peanut Butter
2 medium raw Sweet Potato
2 medium raw Onion Yellow
2 cup Tomatoes, Red, Ripe
4 cloves, raw Garlic
2 tsp Ginger Root
1.5 cup Soft
1 tbsp Olive Oil
5 cup Natural Goodness Chicken Broth

Recipe Directions for Spiced Peanut Soup

  1. Heat olive oil over medium heat in 6 qt pot

  2. Cook onions until they soften

  3. Add garlic, ginger, sweet potatoes and peppers and cook until onions start to brown. Approximately 15 min

  4. Add tomatoes and stir well. Cook another 5 - 10 min

  5. Add chicken broth and bring to a boil. Then reduce heat and simmer for 25 minutes

  6. Add peanut butter and stir until dissolved

  7. Blend soup with tofu
