Recipe Ingredients for spiced orange cranberry muffins

1/2 cup cranberries, chopped
3 tablespoons brown sugar, packed
1 cup orange juice
1 egg white
2 tablespoons olive oil
1 cup whole wheat flour
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Recipe Directions for spiced orange cranberry muffins

  1. Preheat oven to 400 F. Grease muffin cups (or line with baking cups). combine cranberries and sugar in small bowl; let stand for 5 minutes. Stir in orange juice, egg white and oil.

  2. Combine whole wheat flour; all-purpose flour, baking powder, cinnamon and nutmeg in medium bowl. Add cranberry mixture to flour mixture; stir just until combined. spoon batter into muffin cups (about one large tablespoon per cup)

  3. Bake 18-20 minutes or until toothpick inserted into centers comes out clean. immediately remove from pan; cool on wire rack.
