Recipe Ingredients for spiced orange chicken thighs

1 lb chicken thighs
1/3 tsp salt
1/8 tsp pepper
1/2 large onion
1 cup orange juice
1 tsp ground ginger
1/2 tsp coriander

Recipe Directions for spiced orange chicken thighs

  1. sprinkle chicken with salt and pepper. heat large nonstick skillet on med high heat. spray pan with cooking spray. add chicken and cook 3 minutes on each side or until browned. remove chicken and keep warm

  2. add onion to droppings in pan. cook until tender. add orange juice, coriander, and ginger. return chicken to pan. bring to a boil and reduce heat. simmer uncovered for 8 minutes - 4 min on each - or until done and sauce has thickened.
