Recipe Ingredients for Spiced Indian Cauliflower Soup (Modified)

3 cup rutabaga, diced (or potato)
45 gram cauliflower, diced (10 oz bag)
1 1/4 cup onion, diced
1 tbls peanut oil
1 clove garlic, crushed
1 tbls ginger, grated
2 tsp turmeric
1 tsp cumin seeds
1 tsp mustard seeds
2 tsp coriander, ground
4 cups vegetable stock
118 milliliters Heavy Cream
1/2 cup Soy Milk - Enhanced
2 oz Soy Protein Powder (Optional)

Recipe Directions for Spiced Indian Cauliflower Soup (Modified)

  1. Put the rutabaga, cauliflower and onion in a large saucepan with the oil and 3 tbls of water.

  2. Heat until hot and bubbling, then cover and reduce heat.

  3. Continue cooking for 10 minutes.

  4. Add garlic, ginger and spices. Stir and cook 2 minutes.

  5. Add stock and season. Bring to a boil.

  6. Cover and simmer for 20 minutes.

  7. Add cream (or 1 1/4 cup yogurt) and soy milk.

  8. Blend, if desired.

  9. Garnish with cilantro or parsley.
