Cook chickpeas as in How to Eat, soak for 48 hours to make extra creamy and smooth.

Recipe Ingredients for Spiced hummus (4 tbsp/serving)

200 g dry chickpeas
5 tbsp lemon juice
50 ml olive oil
3/4 tsp salt
1 tbsp cumin seeds
1 tbsp coriander seeds
100 ml water

Recipe Directions for Spiced hummus (4 tbsp/serving)

  1. Soak chickpeas for 48 hours in 1tbsp bicarb, 1 tbsp salt and 2 tbsp flour and lots of water.

  2. Toast seeds and grind. Finely grate garlic.

  3. Blend together.
