Recipe Ingredients for Spiced Grilled Veggie Skewers

1 onion, cut into large chunks
1 bell pepper, cut into large chunks
1 squash, cut into large chunks
4 ears corn, silk removed
3 tsp extra virgin olive oil
1/4 tsp garlic powder
1/8 tsp cayenne pepper
1 salt and pepper to taste

Recipe Directions for Spiced Grilled Veggie Skewers

  1. In a small bowl combine EVOO, garlic powder, cayenne pepper, salt and pepper.

  2. Peel back husks of corn, remove silk, brush with oil mixture and re-wrap in husks. Toss remaining veggies in marinade, then thread onto soaked skewers.

  3. Grill corn on high heat grill for 10-15 minutes, rotating occasionally.

  4. Grill veggie skewers for 5-7 minutes, rotating regularly -- or until slightly charred on all sides.
