Almost like an upside down cake, or maybe a baked pudding...Very nummy!

Recipe Ingredients for Spiced Fall Fruit Cake

5 fruit+2-1/8"+dia plums
2 apples
1 nectarine
2 cups cranberries
1/2 c splenda
3 tbsp corn starch
1 cup flour
1/2 c splenda
1 tbsp baking powder
1 egg
1 cup Evaporated Milk 2% M.F. Partly Skimmed
1/3 cup canola oil
1/2 tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves

Recipe Directions for Spiced Fall Fruit Cake

  1. Cut up the fruit in the bottom of a large cake pan. Add the splenda and cornstarch together and toss with the fruit to cover in the pan.

  2. Mix the dry ingredients for the cake. Add the egg, milk and oil and stir until just combined and pour over the fruit. It will be a very light covering.

  3. Bake at 350 until the cake is done - about 30-45 minutes depending on the size of your pan.
