Recipe Ingredients for Spiced Eggplant

9 g vegetable stock
1/2 cup onion, chopped
2 cups mushroom, sliced
1 small eggplant, cubed
1 cup bamboo shoots
1 garlic clove, pressed
1 tbsp grated ginger
1/4 tsp cayenne pepper
1 tsp soy sauce
1 tsp maple syrup
1 tsp cornstarch

Recipe Directions for Spiced Eggplant

  1. Heat vegetable broth in a large saucepan on medium heat. When broth is heated add onion, mushroom, garlic, ginger, red pepper flakes, and cayenne and cover. Cook until mushroom in translucent, then add the bamboo shoots and eggplant. Cover and cook until eggplant is softened.

  2. Mix cornstarch, maple syrup, and Braggs in small bowl, then add this mixture to the saucepan. Mix well until the liquid thickens to your liking.

  3. Serve hot over wild rice.
