Recipe Ingredients for Spiced Couscous with Ginger-Tomato Stewed Chickpeas

1 cup Whole Wheat Couscous
2 1tsp Olive Oil
1 tsp Organic Garam Masala
0.5 tsp Cinnamon, Ground
0.125 tsp, ground Cardamom
0.125 cup Slivered Almonds
0.125 cup (not packed) Raisins, Golden Seedless
3 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 cup Petite Cut Diced Tomatoes
0.5 oz Ginger
1 cup, chopped Onions

Recipe Directions for Spiced Couscous with Ginger-Tomato Stewed Chickpeas

  1. In a small saucepot, saute 1/2 cup onions in 1 t. olive oil.

  2. Add the spices, almonds, raisins, and couscous. Stir until fragrant.

  3. Add the chicken broth, cover, and reduce heat to low for 5 minutes.

  4. Remove the lid and fluff with a fork.

  5. Meanwhile, in a medium saucepot, saute the other 1/2 cup onions with 1 t. olive oil. Add the grated ginger, canned tomatoes, and chickpeas.

  6. Cook until the flavors are melded, 10 - 15 minutes. Serve over the spiced couscous.
