Recipe Ingredients for Spiced Cauliflower

4 cups cauliflower, flowerettes
1 cup onion, sliced
1 tbs canola oil
1/2 tsp cumin seeds
1/2 tsp salt
1/2 tsp pepper, cayenne
1/4 tsp turmeric
1 cup yogurt, low fat, plain
1/4 cup water

Recipe Directions for Spiced Cauliflower

  1. Break the cauliflower into small flowerettes

  2. Heat the oil in a large saute pan over high heat

  3. Add the spices until they jump in the pan, being careful not to scorch, only a few seconds.

  4. Add the onions, turn down the heat and saute until transparent.

  5. Add the cauliflower and 1/4 cup of water.

  6. Turn the heat down to a slow simmer, cover and cook for 20 minutes, stirring occassionally and adding water if needed to keep it from sticking.

  7. Just before serving, stir in the yogurt, or serve the yogurt on the side.
