Not your mothers cooked carrots. A tasty and fragrant version sure to please adults.

Recipe Ingredients for Spiced Carrots

2 tbl olive oil
2 cloves garlic
1 tbl chili powder
1 tsp cumin
5 stalks carrot
1 teaspoon lemon zest
2/3 cup water
1 tsp salt
1 tsp pepper

Recipe Directions for Spiced Carrots

  1. In large nonstick skillet, heat olive oil over low heat. Add garlic cloves, and cook until tender (about 2 minutes). Stir in chili powder and ground cumin, cook for 1 minute

  2. Add carrots, lemon zest, water, and coarse salt/pepper; bring to boil. Reduce to simmer; cover, and cook until carrots are tender. 15-20 minutes.

  3. Uncover; raise heat to high and cook until liquid is thick, 3-5 minutes.

  4. Optional: squeeze fresh lemon juice over carrots in bowl.
