Recipe Ingredients for Spiced Carrot and Parsnip soup

2 small (5-1/2" long) Carrots
0.5 parsnip (9" long) Parsnips
0.25 Cube Chicken Stock Cubes
0.5 serving Peanut Free Smooth Soy Butter

Recipe Directions for Spiced Carrot and Parsnip soup

to make two servings, peel and chop one parsnip and 4 carrots. Melt 2 tablespoons of soy butter, or regular if it is not for a vegan. ad the veg and one crushed garlic glove, you can add half a chopped white onion if you like. let this simmer for 5 minutes. add half a pint of chicken stock, i used a cubed stock. let this boil for about 20-30 minutes or until the veg is soft. add your choice of spices, i used a little cumin and paprika, season with dsalt and pepper then blend until smoothe. the recipe tells you to add a swirl of cream at the end but being health consious i left it out and it is creamy enough on its own.
