Delicious soup which can be made in bulk (divided into individual portions if required) and frozen. Modified from a recipe by Gordon Ramsey

Recipe Ingredients for Spiced carrot and butternut squash soup

1 large red onion, finely chopped
2 cloves garlic, finely chopped
2 tbsp olive oil
2 large carrots, peeled
1 medium squash, butternut, deseeded and chopped
1 salt
1 black pepper, freshly ground
1/4 tsp thyme leaves, fresh
1 red chilli pepper, deseeded and finely chopped (or 1/4 tsp dried crushed chillies)
1 1/4 litres stock, chicken (or vegetable)

Recipe Directions for Spiced carrot and butternut squash soup

  1. Sweat the onion and the garlic in the oil for about 5 minutes or until soft.

  2. Chop carrots and butternut squash into 1.5cm cubes and add to the pan.

  3. Season with salt and pepper and cook for another 6-7 minutes until the vegetables begin to soften.

  4. Stir in the thyme and fresh or dried chilli. Add stock.

  5. Stir and bring to the boil.

  6. Turn down heat and simmer for 30-40 minutes or until carrots and squash have broken down and are soft.

  7. Using a hand blender, blend soup until smooth.

  8. Check for seasoning and ladle into bowls. Serve.
