Recipe Ingredients for spiced butternut squash soup

3 lb butternut squash
1 med Onions Raw
1 med Leeks
4 Potatoes, Red, Flesh And Skin
2 garlic cloves
48 oz low sodium chicken broth
1 tbsp olive oil
1/4 tsp cayenne
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp ginger
1/2 cup sherry wine
1/2 cup fat free half and half

Recipe Directions for spiced butternut squash soup

  1. bake squash in 350 oven until soft, then skin and cube

  2. chop onion leek and garlic and sauté in olive oil until soft about 5-7 mins

  3. add chicken broth and cubed skinned potatoes and cook @ 20 mins until potato are soft & will crumble

  4. add squash and puree with immersion blender or food processor

  5. return to pot on low & add spices, mix thoroughly and add sherry and half & half. do not boil

  6. serve - if you like, add a dollop of sour cream or creme fraiche according to taste
