Recipe Ingredients for Spiced Apple & Meringue Pie

14 oz shortcrust pastry
700 g bramley apples, cubed
1 tsp ground cinnamon
1/2 lemon, juice & grated rind
2 eggs
125 g Golden Caster Sugar

Recipe Directions for Spiced Apple & Meringue Pie

  1. Preheat oven to 200C/400F/Gas mark 6. Roll out the pastry and line a 23cm/9" loose-bottomed flan tin. If time, rest for 20 minutes in the fridge. Line with baking parchment and baking beans. Bake blind for 10-15 minutes. Remove the paper and beans and cook for 5 minutes more until lightly golden. Remove from oven. Reduce oven temperature to 180C/350F/Gas mark 4.

  2. While the pastry is cooking, peel, core and cube the apples. Place in a saucepan with 25g/1oz of the sugar, ground cinnamon. grated rind and juice of 1/2 a lemon, and 2tbsp water. Cook for 10-15 mins until softened. Cool.

  3. Separate eggs. Add yolks to apple mix. For the meringues, whisk egg whites until stiff and gradually add remaining caster sugar.

  4. Spoon apple mix into the flan case, top with the meringue. Cook in the oven for 15-20 minutes until golden. Cool for a little while then cut into slices, serve with cream or creme fraiche.
