This spiced quick bread will satisfy any apple cinnamon muffin craving you have.

Recipe Ingredients for Spiced Apple Bread

2/3 cup flax seed
2 cups flour
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
2 cup sugar
1 cup safflower oil
4 eggs
2 tsp vanilla extract
4 cups apples
1 cup golden raisins
1 cup pecans
2 tsp sugar
1/2 tsp cinnamon

Recipe Directions for Spiced Apple Bread

  1. In a bowl, combine flour, baking soda, salt and spices.

  2. In a mixing bowl combine, sugar and oil.

  3. Beat in eggs and vanilla, then stir in apples, raisins and pecans.

  4. Add the dry ingredients and mix unil well blended.

  5. Grease 2 9x5 loaf pans and line bottom with wax paper. Pour batter into pans, smoothing the top with spatula.

  6. Bake for 20 mins at 325 degrees. Pull out rack and sprinkle loaves with cinnamon and sugar mixture. Continue baking 30-40 minutes, or until toothpick comes out clean.

  7. Cool for 10 minutes, slice and serve or freeze.
