Recipe Ingredients for Spice-Rubbed Salmon with Cucumber Relish

1 tbs brown sugar
1 tsp garlic powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp chili powder
1 tsp paprika
1/2 tsp salt, divided
1/4 tsp dried thyme
24 oz salmon (4 6 oz fillets)
1 cooking spray
2 c cucumber, chopped
1/2 c bell pepper, chopped
1/4 c onion, chopped
2 tbs fresh mint leaves
1 tbs vinegar, cider

Recipe Directions for Spice-Rubbed Salmon with Cucumber Relish

  1. Preheat broiler.

  2. Coat jelly-roll pan with cooking spray; put fish on it.

  3. Combine dry ingredients (using 1/4 tsp salt); rub evenly over fish. Broil 8 minutes or until fish flakes easily with a fork.

  4. Combine 1/4 tsp salt and remaining ingredients, serve with fish and brown rice.
