Plain, spicy muffins with a hint of pineapple-y goodness.

Recipe Ingredients for Spice Muffins

3/4 c soy flour, defatted
1/2 c spelt flour
1/3 c oats
3 tbsp psyllium husk
2 tsp baking powder
1 tsp ground ginger
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground cloves
1 cup unsweetened pineapple juice
1 cup water

Recipe Directions for Spice Muffins

  1. Combine dry ingredients.

  2. Add juice and water. You won't use all of the water--just add as necessary. This batter "soaks up" liquid, so add it, then let it absorb.

  3. Bake 375 for 18-22 minutes
