Recipe Ingredients for Spelt Yeast Bread

1 T active dry yeast
2 T soy flour or instant soy milk
2 T vegetable oil
2 T Honey
1 1/2 t salt
4 cups spelt flour

Recipe Directions for Spelt Yeast Bread

  1. Mix 1/4 cup warm water about (110-115 degrees) and yeast in a 1 cup measuring cup. Stir briefly and let soak while you measure the other ingredients.

  2. Mix 1 cup warm water, soy flour, oil, honey, and salt in a large mixing bowl. When yeast is soft and bubbly, add it to the mixing bowl. Add 1 1/2 cups of flour to the yeast mixture and beat well to develop the gluten. Add the other cup of flour gradually or enought to make a soft dough.

  3. Turn out dough onto a floured board and knead about 10 minutes adding flour gradually as needed to keep the dough from sticking to the board. Greasing your hands can also help control the stickiness. You may need more or less flour depending on the humidity. Use just enough to keep the dough from sticking to the board.

  4. To make a loaf, grease a 9 x 5 loaf pan. Form dough in to a loaf and put in pan. Turn dough over to coat with grease. To make buns, grease a large baking sheet and divide the dough into 10 parts. Shape each into a flattened hamburger or hot dog bun about 1 inch thick and place on cookie sheet.

  5. Place dough in a warm place to rise (about 85 degrees) If you have an electric oven, heat it about 30 seconds, then turn if off. This makes a good place for the dough to rise. Let rise about an hour for a loaf, or until the dough is about an inch and a half higher than the top of the pan. Buns take less time to rise, about 35 minutes. They are ready when they have the shape you want. When the dough has risen, take it out of the oven, and heat oven to 350 degrees. Bake a load about 30 minutes, and rolls about 15 minutes. Remove from pan as soon as possible, and cool on a wire wack.
