An easy dough with great flavor. Serving size determined by cutting dough into balls enough to make 6 small pizzas that each serve 2 people.

Recipe Ingredients for Spelt Pizza Dough

2 1/4 t active dry yeast
1 1/3 c water, warm (105-115)
3 3/4 c spelt flour
2 T olive oil
1 T kosher salt

Recipe Directions for Spelt Pizza Dough

  1. Bloom yeast in the measuring cup with the warm water.

  2. Measure out the flour and salt. Sift into a large bowl.

  3. Add olive oil to warm water yeast mixture and pour on flour. Stir to combine. When all ingredients are wet begin to knead. Knead until the dough is smooth and elastic. Add more flour gradually if the dough is still sticky. Kneading can take up to 10 minutes.

  4. When complete oil a separate large bowl and put in the dough. Flip the dough so it is evenly coated with oil. Lightly cover and place in a warm area until it has doubled in size. When this is done punch the dough down and pull off a piece to form for your pizza.

  5. Heat your oven to 475 (preferably with a baking stone - if not dust a baking sheet with cornmeal). Prep toppings of choice and have ready. When oven is ready roll or toss dough to desired thickness and width. Lay on cornmeal covered peel. Put toppings on and then slide off peel onto baking stone (Otherwise lay dough on baking sheet and top, then place in oven).

  6. Bake until the cheese is bubbly and golden about 10-12 minutes. Use peel to remove the pizza from oven and put on a cutting surface. Cool slightly cut and serve
