Recipe Ingredients for Spelt and orange muffins

2 cups spelt flour
2 tsp. baking powder
2 tsp orange zest
1/4 tsp ground allspice
1/2 cup orange juice
1/4 cup apple sauce
1/3 cup vegetable oil
1/2 cup brown sugar
2 tsp vanilla extract
2 eggs

Recipe Directions for Spelt and orange muffins

  1. Preheat the oven to 170 degrees C / 375 degrees F. Fill a 12-cup muffin tin with muffin cases.

  2. Sift or whisk together the flour, baking powder, zest, and allspice in a large bowl.

  3. In a medium bowl, beat together the orange juice, applesauce, oil, sugar, vanilla, and eggs until well combined. Stir into the flour mixture until just combined. It may be lumpy - don't worry!

  4. Spoon the batter into the prepared muffin cases and bake for 15 minutes or until a skewer comes out clean.

  5. Let the muffins rest for 5 minutes, then turn them out onto a wire rack to cool. Enjoy!
