Recipe Ingredients for spelt molasses rolls

3/4 cup warm water
1 T canola oil
1 T blackstrap molasses
2 1/3 cup spelt flour
1 t fine sea salt
1 t instant yeast

Recipe Directions for spelt molasses rolls

  1. in a large bowl, whisk together the water, oil, and molasses.

  2. in a separate bowl, whisk together the flour, gluten, salt, and yeast.

  3. throw wet ingredients into dry ingredients and stir with a wooden spoon until you can stir no more, and start using your hands.

  4. place dough onto clean, lightly floured surface and start kneading for 5-10 minutes until the dough is smooth, pliable and not too sticky.

  5. shape dough into a ball, and place it in a bowl covered with a very fine coat of oil, swirl your ball into oil to have it just covered with a film of it to avoid dryness during rise.

  6. cover bowl with plastic wrap or lid, place in a draft-free, warm area for at least one hour, or until doubled in size.

  7. in the meantime, line a baking sheet with a Silpat or parchment paper. preheat your oven to 375F.

  8. punch your dough down with your knuckles, place it onto a clean surface and cut it into four equal pieces. shape pieces into balls
