3 c spelt, cooked and cooled
16 oz. edamame, shelled, cooked and cooled
15 oz tomatoes (diced)
3/4 c. feta cheese, crumbled
2 green onions, chopped
2 tbsp. extra virgin olive oil
1 tbsp. balsamic vinegar
1 salt
1 pepper

Recipe Directions for Spelt and Edamame Salad

Cook and cool the spelt. Cook and cool the edamame. Mix all ingredients and refrigerate.
