Vegetarian Spelt Chocolate Chip Cookies These can easily be made vegan by using dairy-free chocolate chips.

Recipe Ingredients for Spelt Chocolate Chip Cookies - vegetarian

2 cups spelt flour
2 cups chocolate chips
1/4 cup brown sugar
1/4 cup applesauce
1/4 cup grapeseed oil
1/4 cup water
2 tsps cinnamon
2 tsps baking powder
1 teaspoon vanilla
1/2 tsp. sea salt

Recipe Directions for Spelt Chocolate Chip Cookies - vegetarian

  1. VERY IMPORTANT­ make sure all ingredients are at room temperature. It will work if they're not at room temp, but it works MUCH better if they are. Also while your oven is pre­heating put the cookie sheets you are going to use on top of the oven so they get preheated as well.

  2. Preheat oven to 350.

  3. In a large bowl mix dry ingredients: buckwheat flour, baking powder, sea salt, and cinnamon.

  4. Add chocolate chips.

  5. Make a trench in the center of the dry ingredients and set aside.

  6. In a medium sized bowl add sugar and oil, mix well.

  7. Add vanilla, then water and mix well.

  8. Add wet ingredients to the trench in the dry. Mix well, but be careful not to overwork it. Add more chocolate chips if you need to.

  9. Spoon onto ungreased cookie sheets.

  10. Put them in the oven for 5 minutes, then flip and rotate the sheets. (top to bottom and 180 degree rotation)

  11. Bake another 4 minutes and check them.

  12. The cookies are done when they seem a little bit softer then you want them to be. They will harden up as they cool. Check on them in two minute increments from here until they get to to the look and texture you like.

  13. Remove from oven and cool on wire cooling racks. If they split or come apart when you try to remove them, let them sit on the pan for 2 minutes before moving them to the cooling racks.
