The sweet spelt is a nice substitute for the traditional rice in this pilaf.

Recipe Ingredients for Spelt, Carrot, Raisin and Spinach Pilaff

1 tbsp olive oil
1 onion, finely chopped
2 carrots, grated
2 1/2 cups (320g) spelt, washed and drained
1/2 cup raisins, dark
2 1/2 cups water, boiled
1 Salt
1 Black pepper
1 bunch (100g) spinach, chopped

Recipe Directions for Spelt, Carrot, Raisin and Spinach Pilaff

  1. Heat the oil, fry onion and carrots until onion is soft. Add the spelt grains and raisins and fry for about a minute.

  2. Add the water, season with salt and pepper and bring to a boil. Cover and cook for 40 minutes on a low heat until the spelt is soft but keeps its shape.

  3. Remove from the heat and add the spinch. Stir well, keep covered for another 10 minutes.
