Yummy banana muffins for breakfast or snacks. Freezes well.

Recipe Ingredients for spelt banana muffins

2 cup Organic Spelt Flour
24 tsp No Calorie Sweetener
2 teaspoon Baking Powder
1 tsp Baking Soda
1 container Light Nonfat Banana Yogurt
2 oz Light Sour Cream
1/4 cup Milk, Nonfat, Fluid
2 tbsp Vegetable Oil, Canola
1 cup, sliced Bananas

Recipe Directions for spelt banana muffins

  1. Preheat oven to 350 F. Line cupcake pans with paper or foil liners. In a bowl, combine flour, splenda, baking powder and baking soda. Stir. Make a well in the center of mixture and add yogurt. If yogurt is a 6 oz container add the sour cream. If itvis 8 oz the sour cream is not needed. Add the milk and oil. Stir till blended. Add the chopped banana and stir to combine. Divide between 12 muffin cups and put in oreheated oven. Bake fir 20 minutes till toothpick inserted comes out clean.
