A very thick and heavy vegetable soup, quick and simple to make, nutritious and very tasty!

Recipe Ingredients for Speedy Skinny Vegetable Soup

1 quart chicken broth
1/2 cup chopped onion
1/2 cup sliced carrots
1 1/2 cup sliced mushrooms
2 cup cooked chicken
16 ounce Red Beans In Chili Sauce Hot Chili Beans
1 cup frozen peas
1 cup frozen corn
6 cups baby spinach

Recipe Directions for Speedy Skinny Vegetable Soup

  1. Bring chicken broth to a simmer in medium sauce pan.

  2. While broth is heating, saute onions (and any garlic desired for taste).

  3. Once broth is simmering, add chicken, chili beans and carrots. Season with pepper as desired.

  4. Simmer for 5-6 minutes, then add mushrooms, peas and corn.

  5. When macaroni and carrots are desired consistency, add spinach and cook down until wilted (or or two minutes).

  6. If desired, top with a sprinkle of parmesan or mozzarella cheese before serving.

  7. Makes 5 cups of soup/stew with little broth. Use more chicken broth if you desire a soup with more broth. You could also sub low-sodium chicken broth if desired.
