Recipe Ingredients for Special Sausage Rolls

2 red onions, peeled and finely chopped
8 oz pork sausages, sausage meat removed from casings
1 tsp. fennel seeds
50 g dried apricots, chopped
1 pinch ground nutmeg
50 g white breadcrumbs
2 large eggs, free range
1 pinch Salt
1 pinch ground black pepper
2 tbsp skimmed milk
1 lb frozen puff pastry
1 tsp. poppy seeds

Recipe Directions for Special Sausage Rolls

  1. Fry the onions in spray oil until soft and sweet. Allow to cool.

  2. Slit open the sausage skins and push the meat out into a bowl.

  3. Bash the fennel seeds with a pestle and mortar and add to the meat.

  4. Add the onions, sage, apricots, nutmeg, breadcrumbs and one of the eggs into the meat. Add a pinch of salt and pepper.

  5. Beat the second egg with the milk and put to one side.

  6. Roll the pastry out into a 8 x 18 inch rectangle to the thickness of a 1coin. Cut the pastry in half to 2 long strips 4 x 18 in.

  7. Wet your hands so they don?t stick to the meat and place the mixture onto the floured work surface. Roll out with your hands to a sausage shape.

  8. Brush the first of the pastry strips lightly with the beaten egg, then place the sausage shape on the the strip, right down the middle.

  9. Place the second strip of pastry over the first and mould it into the sausage shape. The bottom bit of pastry will be sticking out a bit, fold this extra bit over the top layer all along the length and crimp with a fork to secure. Trim any excess off the short ends of the roll.

  10. Brush the top with a little more of the beaten egg, sprinkle with the poppy seeds and chop into 20 slices. Place them on a baking tray. Bake for 20 minutes or until puffed and golden.

  11. They can be frozen on a baking tray, uncooked, and when frozen, they can be put into freezer bags. Defrost thoroughly before cooking.
