Cottage cheese and Special K make a vegetarian meatloaf. For some reason it wouldn't allow me to add Special K to the recipe, so it's listed here as Corn Flakes. However, Special K has more calories than Corn Flakes, so the real total of a serving is probably around 300 calories.

Recipe Ingredients for Special K

1 cup finely chopped onion
1 lb small curd cottage cheese
1/4 cup vegetable oil
1 tablespoon soy sauce
3 eggs, beaten
1/4 cup chopped nuts (walnuts are nice)
4 cups corn flakes
1 teaspoon salt
1 teaspoon sage

Recipe Directions for Special K

  1. Mix all ingredients together and put into a shallow greased baking pan. (about 9x9").

  2. 2Bake at 350 degrees for 45 minutes
