This is a main dish that my family has been making for decades. It's easily customizable, and very tasty. You can add chopped vegetables to increase fiber and vitamins, shredded vegemeat to increase protein, or swap out the cereal or nuts for a kind you prefer.

Recipe Ingredients for Special K Loaf

16 oz Cottage Cheese, Lowfat, 2% Milkfat
2 large Egg, White
2.5 cup Special K Original
1 cup, chopped Onions
2 oz Pecans Chopped
60 grams Soup, Lipton, Recipe Secrets Onion, Mix, Dry
2 oz Extra Virgin Olive Oil

Recipe Directions for Special K Loaf

  1. Lightly beat the eggs.

  2. Finely dice the onions.

  3. Combine all ingredients.

  4. Place in baking dish prepared with spray.

  5. Bake at 375 for about 45 minutes.

  6. Remove when a toothpick in the middle comes out fairly clean and the edges are pulling away from the pan.
