Recipe Ingredients for Special Chicken Curry 497

2 cups chicken, cooked and diced large
2 cups ham, diced
1/2 cup butter
1/2 cup green pepper (approx 1/2)
1/2 cup sweet red pepper (approx 1/2)
1 cup peas and carrots
1 medium onion, minced
2 cups chicken broth
5 tablespoons flour
2 teaspoons curry powder
2 cups milk
1 salt and pepper to taste
1 3/4 cup rice (cooked to put the curry over)

Recipe Directions for Special Chicken Curry 497

  1. melt 3 tablespoons of butter in a large casserole and cook the peppers and onion a few minutes until the onion is transparent

  2. stir in the broth and simmer gently a few minutes

  3. blend the remaining butter with the flour and curry powder and slowly stir it into the casserole, continuing to stir until the sauce is velvetly smooth and thickened; add the milk and season to taste

  4. stir in the chicken and ham and simmer uncovered over the lowest possible heat until almost boiling, stirring occasionally to prevent sticking

  5. add the almonds and coconut just before serving
