Recipe Ingredients for Spanish Yam and Chickpea Soup

2 cups cooked chickpeas
2 cups diced tomatoes
2 cups diced yams
1 medium onion
3 celery stalks
5 garlic cloves
4 cups water
2 tsp paprika
1 tsp turmeric
1 tsp dried basil
1 tbsp olive oil

Recipe Directions for Spanish Yam and Chickpea Soup

  1. Heat olive oil in large soup pot over medium high heat.

  2. Add onion and celery and stir until translucent.

  3. Add yam and garlic with a pinch of salt.

  4. Stir 5 minutes.

  5. Add spices and stir.

  6. Add can of chickpeas (drained) and can of diced tomatoes (with liquid). Add about 4 cups of water.

  7. Bring to a boil. Cover on medium heat and cook for 20 minutes.
