Recipe Ingredients for Spanish Tortilla

2 potatoes
3 cups spinach
1/3 cup olive oil
6 eggs
2 tbsp parsley
1 tbsp chives
1/4 onion

Recipe Directions for Spanish Tortilla

  1. heat grill or oven (180 degrees)

  2. slice potatoes thinly, slice onions and roughly chop herbs.

  3. place half the oil in a medium hot pan, when hot add potato and cover , leave for ten minutes then turn potato and leave for another five minutes

  4. cook spinach and drain well, add to potatoes with the onion, cook together until potato is tender.

  5. crack eggs into a bowl, add herbs and salt and pepper to taste

  6. when potato is tender, add to egg mixture in bowl, wipe out pan and return to high heat

  7. add rest of the oil, pour egg and potato mixture into pan, the edges of the mixture should frill and wrinkle

  8. turn down to low heat and cook until underside is browned

  9. place pan in oven or under grill to finsih cooking the top side

  10. when done, place warmed plate on top, flip and serve immediately
