This is a quick and easy breakfast or weeknight dinner recipe.

Recipe Ingredients for Spanish Tortilla

12 eggs
1 1/2 lbs potatoes
1 onion
2 T olive oil

Recipe Directions for Spanish Tortilla

Peel potatoes and onions and cut into small dice. Heat oil in large skillet, cook potatoes and onions until soft (about 8 minutes). Pour cracked eggs into pan. Add salt and pepper to taste. Stir a few times until eggs start to solidify. Let cook a few minutes more, finishing in the oven. It is done when the eggs in the middle of the mixture are cooked.
