Spanish Tortilla Recipe

Slimmed down from the America's Test Kitchen version.

Recipe Ingredients for Spanish Tortilla

3 tablespoons extra virgin olive oil
1 1/2 lbs. potatoes, peeled, quartered lengthwise, and cut crosswise into 1/8-inch-thick slices
2 onions , halved and sliced thin
1 teaspoon table salt
1/4 teaspoon ground black pepper
4 large egg yolks
8 large egg whites

Recipe Directions for Spanish Tortilla

Boil Potatoes in water. Toss onions in 1 T olive oil. Place another T olive oil in a pan, and heat over medium heat. Add onions and sautee until soft. Drain potatoes in colander and toss with additional oil. Add to onions and sautee 5 minutes more. Blend eggs with salt and pepper and pout in skillet. Bake in pre-heated 350 degree oven until firm, about 10 minutes. Serve warm, or at room temperature.
