Spanish Tortilla Recipe

Keith's version of a spanish tortilla we ate in Tarragona, Spain This is the basic recipe - other stuff can be added

Recipe Ingredients for Spanish Tortilla

5 medium yukon gold potatoes, sliced
1 red onion, sliced
2 tbsp olive oil
1/4 c provolone, shredded
5 eggs, lightly beaten

Recipe Directions for Spanish Tortilla

  1. Clean, peel and slice the potatoes thinly, soad in water.

  2. Slice the red onion - you can opt to saute them before adding the potatoes to carmelize them- I think this would add a nice, sweet flavor to the tortilla.

  3. Turn on the broiler.

  4. On the store, saute the potatoes and onions in a large pan with 2 tbsp olive oil. Lower heat and fold in cheese.

  5. Protect pan handle with foil if it's plastic/grippy and place pan in broiler for a few minutes- until the top is starting to brown.

  6. Serve with your choice of salad or vegetable.
