Recipe Ingredients for Spanish Tortilla

2 t olive oil
2 onions
1 garlic clove
10 oz asparagus
1 cup egg substitute
2 t dried parsley
1/2 t salt
1/2 t pepper
1/4 t dried thyme
1/4 t ground nutmeg

Recipe Directions for Spanish Tortilla

heat oil in a large nonstick skillet. Saute onions until golden, about 7 mins. Add garlic 1 min longer. Stir in potatoes, asparagus, egg sub, parsley, salt, pepper, thyme & nutmeg. Reduce heat and cook, covered, until set and browned on bottom, about 10-15 mins.
