Recipe Ingredients for spanish tortilla

3 potatoes
1 medium onion
6 eggs
2 tbsp. olive oil

Recipe Directions for spanish tortilla

  1. peel potatoes, wash and cut into thin slices. season with salt. finely chop onion.

  2. fry potatoes and onion on low heat until tender, not golden. drain all excess oil.

  3. beat eggs in a bowl. add the potatoes and onion and mix well. coat bottom of pan with a drizzle of oil. pour mixture into pan.

  4. simmer until omelette cooks well on one side. raise edges with spatula to prevent sticking.

  5. use a plate to turn omelette. heat frying pan and slide the omelette from plate back to frying pan to cook the other side.
