A pie of fried potatoes and Onions set with eggs salt and pepper turned onto a place for flipping before setting other side.

Recipe Ingredients for Spanish Tortilla

3 med yukon gold potatoes
3 eggs
1/2 cup Olive Oil
1 salt
1 pepper

Recipe Directions for Spanish Tortilla

  1. Brown onion in 2 T olive oil

  2. fry sliced yukon gold potatoes until soft and browned

  3. whisk three eggs together dressed with salt and pepper

  4. pour over eggs and onion mixture

  5. as it begins to set and move around pan place a plate over the pan to flip the tortilla. After turning out the tortilla to the plate slide back into pan. Once the other side of the tortilla is cooked slice into five pieces.
